the easiest and most delicious cookie. ever.

So let me start this post by saying I am in no way a domestic goddess in the kitchen. I don’t really love to cook or bake however, there is this cookie recipe that I’ve been making for years that is my jam. I am professional at making these and only these. The reason why is because they are the easiest, have hardly any ingredients, and are ready in no time. Plus they’re gluten free which is a necessity for a celiac like me. I’m not exaggerating when I say I make these once a week!

^^^Ingredients you’ll need^^^

1 cup of brown sugar

1 cup of peanut butter

1 tsp baking soda

1 egg

chocolate chips (as many as you want. So, a lot. I like to mix milk and white chocolate.)

^^Mix together brown sugar, baking soda, and the egg until it looks like this above.^^

^^^then add peanut butter^^^

^^mix together and add chocolate chips. Now you have the most delicious dough. It is highly recommended that you eat a good portion of dough before baking (duh). I used to make these with my old roommate, sometimes she’d make them without me. But she ALWAYS left me a scoop of the dough in a tupperware in the fridge for when I got home. It’s THAT good!^^

^^^Spray a cookie sheet and bake for 8 min on 350. They may seem like they’re not finished after 8 minutes, but trust me they are. Let them cool and enjoy! SIDE NOTE: These are much better when they’re cold. I always put them in the fridge or freezer before eating and store them in the fridge for later. It’s personal preference really, but honestly they are just better that way.^^^

ride baby ride.

Happiest weekend to you all!  This week we spent a day at Lagoon with some cousins. I remember loving this theme park so much when I was young that I couldn’t sleep the night before, haha. My feelings on the park have changed drastically since then, but it was really fun to watch the kids get so excited! And how crazy is it that Beau is even big enough to go on a few rides? I was dying at how cute he looked all harnessed in.

paddle boarding!

I hope you all had a wonderful weekend! Ours was so busy with a lot of different activities on both sides of the family. I have quite a bit of family in Stansbury and Tooele, so we headed down there to spend some time at Stansbury lake on Saturday. We rented some paddle boards and kayaks and had the best time! I always thought paddle boarding looked so fun but wasn’t sure how steady I’d be and assumed I’d for sure tip right over. Thankfully I discovered it’s much easier than it looks and it’s even more fun than I thought. The weather was perfect, the water was too, and Beau loves anything where he can be wet and splash around!

We are really loving this summer and making the most of being outside in the warmth! And I have to say that having a one year old has made this summer the best I’ve had yet. He is just too fun! How have you guys been spending the summer?

Recently….

 

We went to a cabin with some friends where I realized that’s just the right amount of “roughing it” for me.

I cut my babies hair because his mullet was going down his back and the top just isn’t ready to start growing yet. (he somehow manages to grow eyebrows like Brooke Shields though.)

I tried some new hair products that are sooooo good. (your hair can thank me later.)

I read this blog post and cried.

Discovered I make Rice Krispie treats like a boss.

Took a nap with my Beau and realized that life doesn’t get much better than a chubby, big lipped baby snoring on your chest.

a trip to the library!

This week we made a trip to the library with a few of Beau’s cousins. This was his first time and boy did he love it! The minute I let him loose from the stroller he was ready to run through the rows of books, explore, and squeal with excitement (literally, he is so loud!!). Although he was more interested in playing with the toys than the actual books ;). I think we’ll be making more trips to the library from now on!

Before we headed off to church on Sunday we snapped a few pics in the yard. I still can’t believe how fast my baby is growing. He looks so big in his bow tie walking around everywhere. He’s only one year old but he’s about the size of a two year old. After church we took a long nap, played outside, and enjoyed family time. I made waffles for dinner since it’s one of the three things I know how to make in the kitchen. I will share that easiest (& healthy!) recipe in the world in a later post. happy weekend!

It’s finally Friday! I love the weekend when my Blake is home and we get to be together all day. We have a busy weekend with a baby shower and a wedding. I am training for a half marathon right now too so I will be waking up bright and early Saturday to beat the heat and run 8 miles…ugh. These pics are a few things I’m loving lately. My baby is his air jordans, snapping candids with my Blake and Beau, snuggles in the morning, pool time, and my favorite birthday shoes. I hope you have a great weekend! What are your plans?

28 years

This past weekend I turned 28 years old. It feels like 30 is really close to catching me, and I feel like when you hit 30 it’s like you are a legit grown-up person. I mean at 28 I still feel like somewhat of a spring chicken, but my Blake who is 33 is a full blown wise owl. So I have 2 more years to live up the twenties before I will NEVER see them again and I’ll have to do things that 30 year old do. Like investing in stocks and keeping up with politics. silver lake.

Saturday night we decided to go up to Silver Lake with some friends after a pizza date. We had so much fun enjoying a little nature walk and a break from the 100 degree weather in the city. I hate to admit that I am not really a fan of the great outdoors. I can appreciate the beauty of the mountains from a distance and never feel the urge to go in them. I don’t enjoy camping or “roughing it” in any way so walking around a lake in the woods was just right. I’m sure as Beau gets older we’ll have to take him on some camping trips so he at least knows how to make a campfire and stuff. Those things are probably important to boys.

my first post.

Years ago I used to blog. I started my last blog about my life on a whim after going through a painful divorce at the tender age of 21. I was newly single and felt the urge to put all my feeling, experiences, and all of my everything on this space that was really intended for myself and maybe a few friends and family to read. At one point I just stopped writing after I found my Blake. I didn’t know if I could do the blog thing like so many do now days. It’s still out there on cyberspace and I look back on it from time to time and smile. You can find it here if you’re interested.

I have felt that urge to start writing again over the past year or so and kept pushing it away. There are so many bloggers out there (especially in Utah right?!) and I didn’t just want to hop on the bandwagon of fashion bloggers and such (although I love a good fashion blog). But here I am anyway ready to start a new adventure in which I can only be myself and hope you can embrace the me that I am. So bear with me as I update this site and try to work out all the kinks (I’m working on my tech skills.) I want to share things that I love, which mostly have to do with my chubby big lipped baby. So this blog will be a smorgasbord of sorts. And hopefully a delicious one.
